I am wondering what would be best. They both can do what I need but I don't know which would be better with it. The server I am using is just a desktop computer so I will not be having RAID or anything like that. I use MySQL and PHP for my website right now, it would be nice to have the mail server that is in Ubuntu server but I know there is software I can install in Ubuntu Desktop.

Mostly depends on your familiarity and the expected load I would say. I've run the desktop with LAMP before and was getting 20,000 hits or so a month and didn't notice any lag on my end. I was also using PHP and MySQL.
