Is there a way to see what is being changed if I apply the latest updates?
From Synaptic, it is very generic without any specifics. I would like to know what has changed before I go applying updates.

Yes if using the GUI based synaptic. So say you want to do an upgrade, hit the "mark all upgrades" icon. On the left hand side where it says custom filters select this. One of the choices will be "marked changes" select this. You'll then see what's going to be changed.

Maybe I should have been more specific.
I want to know what was changed, as in bug fixes, features, etc. I want the details of each change.

Sorry, I meant to say update manager, not synaptic.
For example this is the description I get for libmyth
