I have a projector hooked up to a machine and would like to be able to use a laptop to stream what's on the laptop to the machine that's hooked up to the projector. The machine that's hooked up to the projector is mostly a pass through. Conceivably, I would like to be able to make this doable from multiple machines.

You could try something like VNC (Virtual Network Connection)
Can't think of the programs that are available at present, but a google search should give good results.

I'm good with VNC, but it seems that I kind of want to do VNC in reverse. My desire is to push my desktop rather than pull it from the projector machine.

On the computer with the projector start VLC for reading network stream and on laptop or any other computer start VLC to send stream to network.
Used it, tested it and works. System had one computer sending video stream and 20 receiving it. It was one kind of info system and there was multiple still pictures/ info pages slide show running all the time and with one pc you can start all client's to wait the video and server to serve them.

It will be much easier in your case when you have only one client. (meaning of remote control of receiver pc's)
