Hrm I was thinking, Ubuntu should really have a custom mouse theme. My gimp skills aren't quite up to par to say the least but a nice ubuntu logo to replace the default "waiting" icon would be quite nice I think. Thoughts?

IMO, the outlines need to be much harder. I fear these icons would be kinda hard to spot on a white background. Also, you should look to the Tango desktop project (http://www.tango-project.org/) for more inspiration and try to make your cursors consistent with that projects artwork.
Also, I think the current semi-official cursors for ubuntu are these (http://www.gnome-look.org/content/show.php?content=6550)...

So if you want the "official"-stamp on your icons, that's what you're up against :)

I put together pieces of the watch but all mouse cursor applications I tried didn't seem to work right...specifically gursor and xcurs

Too much Windoze-like, it should have other color, maybe the brown one since ubuntu is kinda earthy-brown.

Jimmac is an old cursor (3 years or so; though good) debian has had it for quite a while.
