My Desktop (http://www.insaneent.echonetwork.net/pics/Screenshot-mac.png)
How do I get the ubuntu logo next to applications menu in the upper lefthand corner to change to, say, an apple logo? I've seen it done before.

Sry I don't know anything about the Ubuntu Logo...

you have to send an .png image over /usr/share/icons/hicolor/48x48/apps/distributor-logo.png
it doesn't need to be 48x48, actually I recommend you to use the same height you use on your panel :)
for a really nice Mac OSX look on gnome, I recommend you to take some inspiration from sonik:

I like that a lot - I will be trying kubuntu for the first time next week and never ran linux - I am on osX now - how the heck could I do that???? seriously and meticulously - without screwing my new laptop up?
