Ubuntu matlab server

Hello, I'm trying to setup a simple server to be shared between myself and another graduate student to be used to run matlab and other high demand processing jobs. Is it possible to install the Ubuntu server and then install matlab and other software via command line or is it much simpler to do by installing one of the graphical versions (ie. ubuntu or kubuntu)? After installing the software we'd be running via SSH connection. I'm pretty new to this so forgive me if not i'm using the correct terminology or I'm not clear.
