Home Imap Server

I tried following guides like this one, http://flurdy.com/docs/postfix/ , but I can't get to work just right (working on it but anyway). Guides go in great detail on how to set all this stuff up but I don't understand how I could adapt a home imap server to grab mail from my gmail account and store it in my local mailbox. My intention is to have a mail server running and keep my mail in one place for when I play around with different mail clients. I do not need remote access to it or anything overly complicated.

I dunno, maybe I just don't understand it all yet and should just keep trying. Can anyone provide any tips or other guides maybe? :cool:
