Well I understand the rationale for not encrypting server side for sharing reasons, but wouldn't it be simpler to encrypt everything and then just decrypt the things that we want to share?

This is certainly a possibility and up for consideration. For now, we recommend people encrypt files locally, so that they have full control over the encryption they desire (strength, which files, etc.)
