"Shift + Ctrl + N" That's the shortcut for the file menu option, anyway. You could always setup your own shortcut in "System > Preferences > Keyboard Shortcuts", as well.

System --> preferences --> keyboard shortcuts
is the way to change one or two keyboard shortcuts.

Some of the keyboard short-cuts will be specific to the version of gnome you are running and other i guess would be saved. The gnome configuration files see: (
http://library.gnome.org/users/user-guide/stable/prefs-keyboard-shortcuts.html.en (http://library.gnome.org/users/user-guide/stable/prefs-keyboard-shortcuts.html.en)) are stored in the [.gnome - Directory] and [.gnome2 - [Directory]. Somewhere.

The GNOME Documentation Library might be a place to start looking.
