OK, here is what I want to do.

I want to encrypt a folder on one of my drives, and chose a password for it. How do I do that in Ubuntu with out encrypting the whole drive?

You can create encrypted private directory with ecryptfs. Check out this link: https://help.ubuntu.com/community/EncryptedPrivateDirectory
