Is there an alternative to VLC for transcoding video that doesn't expect you add a whole lot of command line arguments by hand? The reason I ask is that VLC is unable to render sound correctly from both my camcorder and my camera.

Avidemux perhaps?
And there's a GUI to ffmpeg called WinFF you also might want to try.

Yes, try PiTiVi (from the PPA (https://launchpad.net/~gstreamer-developers/+archive/ppa), for Jaunty or Karmic only) or Transmageddon (http://www.linuxrising.org/transmageddon/), or Arista (http://programmer-art.org/projects/arista-transcoder).

There is also raw ffmpeg from the command line. ffmpeg can also be used to rip the audio only
