Is it possible to run Hardy without updating?
What would be the worst case?
How would I go about it?

You don't need to update. Just ignore the update program once you have a clean install.

The worst case is that if you don't update at all, there are multiple security flaws you will be vulnerable to. From then, you may be vulnerable to various malware, hacking exploits, and various system instabilities that may cause crashes and the like.

If you want to reduce your updating, I recommend for you to only enable the security updates(disable recommended updates and any others). These are the most important for the security and stability of your system.

That sounds good.
How do I go about disabling recommended updates?

Nothing make me mad like a new update making my system run worse.
I had a Win98 machine once that never went online or got updated.
Booted and ran as fast as anything on the market when I sold it.
