I like the default Ubuntu theme, but I kind of want to get away from it. I'm having trouble finding a theme that I really like. Can anyone suggest their favorite themes?

For a good minimalist theme, look at The Beck Theme.

Id have to say the ish series, rounded top and bottom widows with a custom default icon set with gorilla folders.

I love Water Vapor with AlphaCube Metacity borders.
Also, AlphaCube GTK is nice...

I am going for the t-ish themes, which I think work very good. I sometimes use the nuove xt icons or the snowish icons.

I Have two choices... :D
1. Clearbox-In Window border with Clearlooks-executive controls
2. Smokey Window border with Smooth-Coolblue controls
& D3A or GNANT icons

My favourite gnome theme is the Clearlooks Big Pack:

My favourite of that pack is Clearlooks-Executive. I use openbox as my window manager, instead of Metacity, and I created a nice openbox theme that matches Clealooks-Executive :)

My absolute favorite:

The only pink clearlooks theme in existence (not counting the pink in ish, because the gray makes my eyes hurt)
I made it myself when I realized there was no good pink themes. I may get bored again and do a few others sometime later on, but not sure.
It requires the latest gtk-engines from GNOME's CVS, which you can find a how-to on these forums if you don't know how to get it.

No they are not :))
Bitmap files are just leftovers form before.
However, T-ish milk is now obsolete so I suggest you take the T-ish or T-ish brushed borders (no bitmaps) and mod them to your need. I built my gtk themes on your ish themes so it's only fair to repay you back with metacity :)) wich is heavily modified GlossyP.

D3a all the way! Metacity, GTK2 and icon. Clean, beautifull and non-disturbian at the same time without distracting you for do your work/stuff.

ToniThanks but I already rounded ish and aqua-advanced. Standard size window border titlebar, across all platforms, is 23px allowing larger font sizes to increase titlebar height. T-ish starts at 26px, which is fine if that's your taste but, at least in the black theme, there are 22px and 23px buttons which 'could', but not necessarily, make it difficult for someone to adjust the titlebar down. Oh, and the black buttons are a little rough on the left and right sides. Just letting you know. Have fun!

Yeah, I just really like the minimize/maximize/close buttons on the BlendedSmallDoubleRound. Right now I'm actually using BBX-Mercury to see if I prefer it. I'll have to change my wallpaper to match it. ;)
The MMX-Mercury icons look pretty nice, too, but all the download links seem to be down.
Edit: They're up now, and beautiful.

It will take some time polishing them so I decided to give it a try and chech user opinions. If I receve score above 70% or more then 10 usercomments in reasonable time I'll polish everything.

They suit very well together. Clear, refreshing, not distracting, good usability. I often try other themes too but always go back to that combination (another Clearlooks colour theme that I like, is my own mix of gperfection2 and Olive colours, but it is still under construction...)
As for gPerfection icons, I think that the GNOME project should really replace their old icons with the much more refined gPerfection version of that icon set.

I wonder if there's any really complete icon set out there? I love the Tango icons, but they lack most of the icons I need (Firefox, Thunderbird, Gaim ...). Currently I'm using Clearlooks-Graphite for GTK, Clearlooks Squared for Metacity and the NuoveXT icons because they are almost complete.
