I have a system with win 7 on it already, but a little over 20 gigs of free unpartitioned space, set aside for this install. I'd like to set up and LVM with 3 partitions, /, swap, and /home, I'd also like / and /home to be ext4.

Using the live CD, the "install side by side" option, carves out a 2.5 gig chuck for ubuntu, and leaves the unpartitioned space alone. I of course do do not want to "use entire disk" - at least not yet : ). The "use largest continuous free space" does not install a boot loader, and it only makes a swap and / partition, with the / partition being ext3, not 4.

I suppose I'll have to do this manually, then?

am I able to do this via the live CD partitioner, or will I need to use something like G-parted live?

The live cd will do. You'll have the manual option at the bottom, when choosing how to partition.
