Take a look at the video presented here:

1. I want to make videos like that with Ubuntu Linux where I hook up my headset microphone and start recording screen interactions. How do I achieve that? I have Ubuntu Linux 8.04.2.

2. After I get skilled with that, it would be nice to add fades to white or black for displaying messages, fades to white or black between scenes, and splicing in a face-forward video interview of me with text underneath my name. What do you use to achieve this?

I'm completely green at this, but know command-line Linux a good bit -- especially for my web development tasks.

wink is made for that kind of purposes.i do not know if it can records the audio but you can record the audio with any other software and sync it easily.That is the easy part.

You can use RecordMyDesktop for this, it's in the Repos. GTKRecordMyDesktop provides a GUI for it. Here's a sample, I made it myself (hehe): http://www.youtube.com/watch?v=-9Nos9lLq_E

There are a lot of apps out there that will help you for this thing. Cinelerra comes to mind, but my app of choice is Blender (it comes with its own video editor).

I'm completely green at this, but know command-line Linux a good bit -- especially for my web development tasks.

You can also take a look at FFMpeg or mEncoder if you can work in the command line.

I would also take a look at 'kdenlive' for editing, adding simple transitions and effects...
