Install the ubuntu-restricted-extras package, then mp3 should be listed there.

I'd like to elaborate on that a little bit. MP3 is not included by default because its a proprietary commercial format. There are alternatives (that are better) depending on what you want to do with the music. I rip everything as FLAC first since its lossless and then transcode from FLAC to whatever other lossy or lossless format I need be it MP3, AAC, whatever a player needs.
Ripping to MP3 files looses quality compared to the original file (unlike FLAC which keeps 100% of the original quality) that is thrown away for the benefit of a smaller file size. It might not matter that much now but in twenty years from now the music being ripped might be much more important to you. A buddy of mine ripped all of his CD's to 128 Kb/s MP3 files to save space on the hard disk, then all of his CD's were stolen and the only thing left are poor quality MP3 files. Needless to say he rips everything as FLAC now like I do. There's a big difference if you do a side by side comparison of any compressed file next to the original CD or a FLAC file. That's from the perspective of an audiophile.
