I have a circular region in an image I want to crop to. How do I do this with gimp?

I'd use the path tool to draw around the edge of the circle and outward(you can use small links between points to make it more circular and press shift to start a new selection)

From then you can pick select from path and cut it out

Use the circular selection tool to select a circle around what you want to crop.
Select > Invert
Hit the delete key.
Image > Autocrop image.

or also when you have the selection just right click on it and choose "File > Create > From Clipboard" and it should open a new image just with the selection. To save it as a circle just save it as a .PNG

Good Luck
