In Mac OS X I could hold alt+e, then press a,e,o,etc and it would put an accent mark over it. I could press alt+u, then u and it would put 2 dots over the u. Now I can't since I switched to Ubuntu and I might switch back because I need this for Spanish. Now, I DONT have an AltGr key for a compose key, and I can't figure out how to map any key on my keyboard as my compose key for dead keys. I have looked at the options, played around and can't figure it out. Can someone please give me a terminal command, an edit, or some add-on so that I can quickly add accent marks on my Macbook Pro. Thank you!

the functionality you experience in OS X is specific to OS X. There is a bug about the Alt-Gr key against ubuntu and it is triaged. You might want to check there for info:
