I'm thinking of upgrading ram to 4GB on my Daru2 as it currently has 2GB.

Before I go and do that, I was wondering how many DIMM slots it has.

The manual says 2 while DMIDECODE and CPU-Z says 3.

Which is correct ?

Can I get just a 2GB stick and add it to the 2x1GB it currently has, or should I replace them both with 2x2GB sticks.

About the ram speed, I can get OCZ SODIMMS pretty cheap but they are 800MHz - are they compatible ? (I know they will work at 667MHZ)

It has two slots. You will need ddr2, 667MHz, 200-pin memory cards.

You could add a 2GB card in addition to your 1GB card. I doubt you will run into any problems with that. But, it's generally not recommended. It's always better to have two equally matched cards.

So just to get things straight: If I add 2GB card, I'll have a total of 3GB because one of the 1GB cards I have will have to go.

Correct ?

One last thing I forgot to mention. To use more than 2GB, you will need to be using 64-bit Ubuntu.

Again, memory is cheap right now. I'd go for the full 4GB. You'll get better performance.

Buy while you can, from what I'm hearing the price is going back up, and a world wide shortage is coming. Apple is stockpiling to prepare for it.
