There's a nice guide for converting a single disk system to RAID 1 by adding a disk at:
file:///usr/share/doc/mdadm/rootraiddoc.97.html
The guide is clear for new Ubuntu users until the last two sections that involve Lilo. I'm not familiar with Lilo since Ubuntu comes with GRUB. Would someone be interested in updating this guide to reflect GRUB settings?
Update: the guide covers GRUB further down the page. However, it did not work for me using the non-Server kernel. Starting fresh with the Server Edition CD was much easier.
