Noob question: what is the difference between the nvidia drivers and the proprietary drivers? Which should I use?

You mean between the NV open source drivers and the Nvidia Proprietary drivers.

Use the proprietary ones if you want any kind of graphics performance. The NV drivers are slow in Open GL and are very basic. I don't think they even use all the ram.

How would I remove them and use the proprietary drivers? What are the proprietary drivers? Thanks for tolerating my noob questions.

You don't remove the open-source driver, you just install the proprietary driver. Just go to System > Administration > Hardware Drivers and you will be given the option to install the proprietary driver.

I get the following when I try to activate the proprietary drivers: Reconfiguring X.org video drivers is not possible: /etc/X11/xorg.conf is invalid.
