Hi,

I've just installed what I thought was 64bit server edition of 8.10, but it turns out to be the Desktop 64 bit version. Can anybody suggest where I can get the server edition?

Is it on the alternate installer CD?

Click on Server edition (http:///www.ubuntu.com/getubuntu/download), Check Custom options, then the Begin Download button.
