Proxy for what exactly ?
Squid is an options, you can proxy with apache, and there is a little proxy, pound
so it depends on what you are wanting exactly.

Ill second a recommendation for Tor if your seeking some level of privacy from your proxy.
While using TOR be aware that you are only anonimised as long as JavaScript and Flash are not running. If they are they can get your IP.

any recommendations?
To make any kind of accurate recommendation we would need to know what you want to proxy and why, web data? im traffic? to ensure privacy? to speed up access for clients? etc.

I've been very happy with "oops". It's not an anonymizer like Tor, but its got good cache control and speeds things up a good bit.
