I would like to now this to. It's kinda stupid not to have it there all the time.

Here a quick guide how to make Mail Notification to show in the system tray all the time:
1. Press Alt + F2
2. In the box enter: gconf-editor
3. Once teh Conf Editor has started press the arrow next to "apps" and scroll down to mail-notification
4. Press the mail notification entry, in the right pane you should see various options, the top one should be "always-display-icon" press the checkbox next to it.

Done!
